That same philosophy extends behind the bar, where Beverage Director Alejandro Echeverria brings years of knowledge and experience - including time tending the bar of Michelin-starred restaurants - to a beverage program rooted in seasonality, creativity and meticulous attention to detail.

The Black Parrot tulip—Chef Levy’s personal favorite and inspiration behind our name—is a flower with deep tones, hidden hues, and untamed movement, striking yet understated. The thoughtful, expressive and innovative spirit of the black parrot fuels everything we do.
